200 and 250 series (lc.lactis ssp.lactis or cremoris, leuconostoc cremoris, lc.lactis ssp.lactis biovar Diacetylactis): rapid higher temperature set lactic acid bacteria for regular and naturally thick buttermilk.

300 series (lc.lactis ssp.lactis or cremoris leuconostoc cremoris):
Traditional lactic acid bacteria for sour cream and buttermilk

350 series (lactis ssp.lactis or cremoris):
Traditional lactic acid bacteria for naturally thick sour cream and buttermilk

400 series (st.thermophilus, lb. bulgaricus):
Traditional lactic acid bacteria for yogurt

600 series ( lb. acidophilus, bifidobacteria sp.):
Probiotic adjunct lactic acid bacteria for yogurt and fluid milk
